All of our doughs are mixed with a mother yeast culture and biga (preferment), and are fermented for 24-48 hours. This long dough process results in a tastier, and more easily digestible, final product.

Everything is rolled and stretched by hand, assuring that our products always appear freshly made—we strongly believe in the artisan touch!

 

Our unique packaging extends the shelf life of our pizza crusts (3+ months shelf stable, 6-12 months refrigerated/frozen) and breads & focaccias. This ensures our products are always fresh and ready to serve, tasting as fresh as if they just came out of the oven, with NO preservatives or chemical additives—a truly clean label product.
